Easy Chopped Winter Salad
If you’ve been on tiktok lately, you’ve probably seen the viral chopped salad by Baked by Melissa that people are making all over social media. It’s fun to see so many people come together and use a recipe and share their own personal touches. I love to see folks get creative in the kitchen and chopped salads are a fun place to start!
When making a chopped salad ( or any salad honestly) you want to add complementing and contrasting elements, sweet, salty, bitter, crunchy etc. This is my version of a winter chopped salad using seasonal ingredients and farro to make a beautiful and well rounded lunch with lots of brightness, texture and crunch!
Winter Chopped Salad
Ingredients
2 cups cooked farro
2 medium green apple finery diced
2 cooked beets, finely diced
½ head of radicchio, shaved
2 scallions, sliced
¼ cup pecans, chopped
¼ cup parsley chopped
1 Tbsp preserved lemon finely diced
2-3oz feta crumbled (optional)
Dressing
2 Tbsp olive oil
2 tsp lemon juice
½ tsp maple syrup
½ tsp grainy mustard
salt and pepper to taste
Directions
In a separate bowl, combine all of your dressing ingredients and set aside. In a large mixing bowl combine all of your salad ingredients. Add your dressing and toss to coat. Enjoy on a bed of baby lettuce or on it’s own. Store any leftovers in the fridge for up to 3 days.
